Apple Cinnamon Chimichangas

Ingredients
Pie Filling
4 Honeycrisp apples, peeled and chopped
1 ½ cups water
¼ cup cornstarch
¾ cup sugar
½ tsp cinnamon
¼ salt
1 tbsp lemon juice
Cimichangas
8-10 small tortillas
½ cup sugar
1 Tbs cinnamon
Oil for frying
Optional:
Add caramel or chocolate drizzle and whipped cream.
Instructions
Combine water, cornstarch, sugar, cinnamon, salt, and lemon juice in a medium sauce pan and bring to a boil. Cook for approx. 3 minutes or until mixture becomes very thick.
Add chopped apples and reduce to a simmer. Allow the apple mixture to simmer until the apples become tender. Approx. 10 minutes. Allow the mixture to cool.
Spoon 1 ½ Tablespoons or desired amount of filling into the center of each tortilla. Fold the sides in and over the filling, then roll up like a burrito. Use a toothpick to secure it.
Heat oil in a large, deep saucepan over medium heat.
Working in batches, fry tortillas, seam-side down, in hot oil until browned and crispy, 1 to 2 minutes per side. Blot on paper towels. Remove toothpicks and roll chimichangas in cinnamon sugar to coat.
